Ingredients:

1–2 SummerStar Ruby grapefruits

100g Roquefort cheese

1 ripe avocado

60g rocket leaves

A handful of pecans (or walnuts)

1 tbsp sunflower seeds

Olive oil for dressing

Salt & freshly ground black pepper
Instructions:
1️⃣ Segment the grapefruit into wedges and set aside.
2️⃣ Slice the avocado into thin pieces.
3️⃣ Arrange rocket leaves on a serving plate, topping with grapefruit wedges, avocado slices, and chunks of Roquefort.
4️⃣ Sprinkle with pecans and sunflower seeds for crunch.
5️⃣ Drizzle lightly with olive oil, season with salt and pepper – and enjoy immediately.
